The KUS KUS project, conducted over a two-year period from September 2018 to February 2021, aims to enhance culinary heritages by training adults, particularly those with limited qualifications or from immigrant backgrounds, to become entrepreneurs in the culinary sector. Focused on world cuisines, the project seeks to leverage gastronomic heritage as a means of learning and understanding territories, thereby promoting social and professional integration. The project offers high-quality training, both in technical aspects (KUS KITCHEN) and online entrepreneurial skills (KUS PRO), along with a toolkit for marketing skills (KUS MARKET). By emphasizing the valorization of local products and world cuisines, the project aspires to redefine the image of food and gastronomy, making it more accessible and rooted in societal culture. In response to socio-economic challenges, the project aligns with the European action plan 'Entrepreneurship 2020,' recognizing entrepreneurship as a means to combat unemployment and social exclusion. Project partners in France, Portugal, Ireland, and Germany collaborate to develop training tools, programs, and regional alliances aimed at promoting entrepreneurship in the world cuisines sector. The project's outcomes are tested with 160 adult learners and 160 organizations, with broad dissemination across four events involving 240 organizations. The project's digital productions, available in four languages, are viewed by an audience of 8000 individuals. KUS KUS thus asserts itself as a dynamic tool for showcasing European cultural heritage and its diversity through the lens of culinary entrepreneurship.
